I simply grind into my stock double basket and level it flat with one swipe of a my doser cover (nothing fancy). I then tamp using my convex Espro tamper and I end up just below the ridge mark in my basket. I weighed my dose and I was surprise to find I get a consistant 18g. I thought I would get 14g (a double) but pleasantly surprised it gave me more.

It depends on the beans but typically 17+g if I level across the top. Lately I've been playing with smaller doses(15g or less) as I like to drink doubles throughout the day and don't want the big caffeine hit of the larger doses.

I'm a 15-16 gram kind of guy. It's well below the ridge and with some beans there's almost no impression on the puck from the bolt (on the group).

Yeah, I noticed you dosed less than me in your video. I have the same espro tamper and mine sits about 1/8 inch above the rim when I've tamped.
You use a lot of one finger Stockfleth moves and force the grounds with that finger. You must be able to repeat this more accurately than me. I just level and tamp, but I may start experimenting with more fancy techniques as well since I've had a few uneven pours in the last few days. My dosered Super Jolly produces more clumps than I thought it would. I can't stir and dose at the same time when using the doser so the mini-WDT stir is out for me.
I had a good technique going with my old Silvia but it seems I'll have to do some "relearning".
I really like the way the basket hangs over the edge of the Vivaldi PF. It saves me a lot of time not having to clean the edge of the PF with my fingernail before locking in.

I do push down on the grounds as I spin it around, as a matter of fact (the videos don't show it) but the coffee cake is very well below the rim of the basket when finished. I guess it's a compliment when some fellow coffee-geekers told me that with a distribution like this they wouldn't bother tamping
I never really looked at it carefully but after that so-called "Stockfleths" move, the coffee looks very much tamped and ready to go.
As for relearning a technique for the Spaz, you should have no problem finding your groove soon.
Now if I can somehow invent a technique to the point of going tamp-less...that would a cool money and time saving trick!

I typically use somewhere between 19.7g and 20.1g, but I have a slightly larger PF. I think I used something like 16.5g with the double PF.

for a while i thought more was better and was generally going for 17 - 17.5gs of these single origin brazil beans because it fit, but lately i have found with some other beans that at 15 gs i get a better pour, less blonding and better crema, which even before tamping does not come up to the top of the portafilter

15 grams is the sweet spot for most of the single farm Brazils I shovel through the machines

at the two better coffee shops i go to in ny, they have synesso machines and always dose triples, 21 - 23 gs depending on the coffee; it makes for quite the strong latte in the 6 oz cup; at the other shop they use black cat with the sleek 10 oz iitala mugs which is really good
