when i fill the double basket with 15 or so grams of coffee and tamp well, i still only get about a 10 - 15 second pour. i am grinding my beans with a mini mazzer electronic set a little finer than the factory setting. i have a brand new VII and haven't changed any of the settings or the screen configuration. so far i have used sant eustachio beans and the beans i received from chris coffee with the machine. i have lots of crema and no channeling. any ideas on how to cchieve the perfect 25 second pour 

I'm not sure if I'm seeing things but I think I've seen this posted already...
But here goes, like Jon said try a finer grind and make sure you're tamping at or around 30-40lbs. Keep the tamp consistent no matter what, pick a pressure and stick with it and after that adjust the grinder.
On my Mazzer, the factory setting is way too coarse for my style so I go much finer and I still tamp around the 35-40 lb zone to get my ristrettos. You should also have an accurate scale that is capable of measuring 1/10 grams so you can get a better idea on dosing.
