Why 120C on the V1's?

Why 120C on the V1's?
Hi, I wonder why there is a 110C and 120C santigrad celcius heat selection on Vivaldi V1's? Even if the water be boiled to that values underpressure, is it any good to brew coffee at that values? Any explanations?

It was an incredibly stupid design idea. I really doubt you'd ever use 100C or 105C either.
