Gonna miss this place! GS/3 is inbound...

Well, I've succomed to the clutches of wrekless consumerism; I've ordered a GS/3 from Chris. The Vivaldi has been a real pleasure during its brief stay in my kitchen. I really can't imagine I'll get much more from the LM (but I'm hopeful).

What's been so nice about the Spaz, beyond its capability, is the support of the S1 community and the fact that Chris's knows the machine so well that any issues are efficiently resolved. Hopefully the GS3 will develop a similar support network! This forum is a resourse I will miss.

Good luck. Let us know how it turns out. For the price the coffee should be more than 4x better! How much extra do they hit you for the plumb-in kit?

Oh, I agree... it "should be." Of course it won't be. I expect it'll be just a bit easier to nail the brewing parameters. It just provides, perhaps, that little step closer to our neurotic quest for the god-shot (or a higher percentage of them). But it does come at a high cost, indeed!

AFAIK, it comes plumb-in ready and pour-over ready. I'm heading up to Albany next week to do the calibrations with team Chris Coffee.

I expect that those with more patience than I will be rewarded by price cuts on the GS3 in the not to distant future. Also, some of its innovation is likely to show up in the competition. I expect the Vivaldi III will have a PID option, as well as an "open flow" pre-infusion setting. An upgraded side panel is another rumored option.

The write-up on Chris Coffee site surprised me with the statement "plumb in kit optional". Given that most folks buying a machine in this class would want to plumb it in and the price is $7500, you'd think it would be included.

I never thought I would lust after another machine (I still have the S1). However, as ridiculous as I think the price is...

If I had the $$, it would be MINE!

Just wondering, what will become of your S1 once you're dialed in and comfortable with the GS/3?

I was guessing it was going to the office or something, like I would do.

It would be interesting to hear any durability feedback you have on the S1 after it spends some time knocking around.

I picked the machine up at CC last Thursday. I'll refrain from any comprehensive opining since I only set it up a few hours ago. The break-in period is always awkward. It was awkward when I went from my Isomac to the S1. Likewise, I feel a bit clumsy on the GS3 for now. I'll just say this... once CC/Spaz decide to up the Vivaldi to include a PID and some minor tweaks, the GS3 will become much less relevent.

BTW, the switch to direct plumb-in is very simple no-cost option.
