Brew pressure effects on flavor?

I've been reading the very informative thread "DIY PF pressure gauge" http://www.rimpo.org/wforum/viewtopic.php?p=1738 and am going to hit Home Depot tomorrow and put one of these beasties together.

So a few questions:

a) If I create a pressure gauge that can measure "dynamic" pressure, or pressure with an outlet of 2 oz of water in 25 seconds, are people finding that 9 bar dynamic is recommended? Higher? Lower? Why would any vendor set the default to 10 when the conventional wisdom (seemingly) everwhere seems to advocate low 8s to 9? Is there a benefit to 10?

b) How does flavor change between higher and lower brew pressure values?
