Hoffmann isn't a pseudo-guru or a charlatan. His blog is great and his roastery -Square Mile Coffee- is great too. His comments about crema and blog comments are made to make people thinking; Hoffmann don't apart the crema in his shots, but -as he say- crema does not mean a good shot. You can pull a...

When you say "I could swear have less crema this week than last week. " You mean with the same roasted coffee batch? Although I think you know it, coffee looses crema as times passes.

I missed that question before. I am using the triple basket for all shots over 15.5g. I think that the head space that this gives makes for an even gentler pre-infusion. I get much better pours with a triple basket with lots of head space than an over packed double basket. But that means no double ...

Next time I'm at CC I'll pick up a Motta. Can't decide between the 12 and 16 oz though. Your pitcher from CC is better than the Motta. Take a look at Michael Phillips or Scottie Callaghan on WBC'10.. they use a pitcher with a shape like the one from CC. (Phillips's pitcher is rattleware) I use the ...

Smoothly remove the water tank

I Always have problems to remove the water tank and put it again. Perhaps could I put a little of Lubri-Film on the water connection o-rings to reduce the friction? However I'm afraid that some Lubri-Film could move to the boiler. What do you think?

Yes. I always use between 88ºC-90ºC, but only for espresso italiano, which is generally far more roasted than new school coffee and usually contains robusta which I like it a lot.. More temperature and you lose aromas plus you're going to increase the bitterness. Extended temp range is a good featur...

I think I have the same holes issue with bottomless and with the spouted. I don't see how the spout could affect something like that.
